Venues who provide large scale catering for weddings, conferences, sporting events etc will always have the need to be able to use a Banqueting system. The end goal will always be to provide quality food for a large amount of customers but how you achieve this will be different based on chefs own personal style as well as facilities available close to the event space.
The most common ways to achieve this are to fully prepare the food and then transport hot. This can be either plated or in batch containers. The other common way is to cook, chill and regen.
